Treats For My Nutty Family

This year I wanted to make treats for my family that would pass my mom's healthy test but still be tasty enough that they'd actually eat them...hopefully love them! So after much ado, I decided on spicy garlic nuts. I am going to turn up the heat for my dad and brother and make a milder version for mom.


Spicy Garlic Nuts

Ingredients:
  • 4 cups unsalted nuts (I used equal parts walnuts almonds, and  pistachios) 
  • 1-1/2 tablespoons garlic oil (I made my own, but you can usually roasted garlic oil near the other oils. )
  • 2 tablespoon Worcestershire sauce (I found a great recipe for this and made my own as well - remember, I have to convince my mom)
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon paprika
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon chili powder
  • For extra spicy cayenne pepper to taste. I really like a little heat so I went with 2 tablespoon. Habanero could be interring as well is a smaller dose.
  • You can also squeeze a lime into the mix
Pre-heat oven to 250°F. Line a half sheet pan with parchment paper for easy cleanup. Place all nuts in a large bowl and toss well to combine.
Pour the garlic oil and Worcestershire sauce over the nuts and toss to coat. Mix the dry spices in a separate small bowl and sprinkle evenly over the oiled nuts. Again toss well to coat. Use a silcone spatula to scrape the bottom of the bowl so that there are no pockets of oil.
Spread the coated nuts on the parchment lined pan. Bake the nuts for 10 minutes. Remove from the oven and stir well with a silicone spatula or wooden spoon. Bake for an additional 10 minutes or until the nuts are mostly dry to the touch. They will continue to dry as they cool, so be careful to not over bake.  
Remove nuts from oven and let cool on paper towels to remove any liquid. Sprinkle with additional salt if desired and serve. Store any leftovers airtight at room temperature.
Notes
I turned off the heat and left them in the oven for and additional 5 minutes.  Also - After making the oil, I took the garlic cloves out, diced them to tiny pieces and cooked them in a clean, dry pan until crispy. Add to nut with all the other ingredients for a little more garlic taste.
really like spicy foods  - I could've gone with more pepper.

Worcestershire Sauce Recipe

What You Need:
(Makes about 1 cup of sauce)
  • 1/2 cup apple cider vinegar
  • 1/8 cup molasses
  • 1/8 cup soy sauce
  • 2 tbsp honey
  • 1 tbsp fish sauce
  • 1 tsp pepper
  • 1 clove garlic
  • 1 tsp onion powder
  • 1/2 tsp chili powder
  • 1/4 tsp cinnamon or ground clove
  • 1/2 tsp ground ginger
  • Juice from 1/2 lime
In a small saucepan, mix ingredients together and bring to a boil.  Reduce heat and simmer for 10 minutes.  Remove from heat and pour into a blender.  Blend until smooth. Store in a dressing bottle, or covered bowl in the refrigerator for up to 1 month.
Garlic Oil Recipe
  • 4 garlic peeled and sliced
  • 1/2 cup virgin olive oil
Add the garlic and oil into a small sauce pan. Use medium heat until the oil just starts to bubble, then turn it to low for about 5 minutes. The garlic used start to brown. Let oil cool. You can use it just like this, add the garlic to a jar and put the oil over it. Should last a few days in the fridge. I like to put the garlic back in the pan and cook until it's crispy and dry.
